Generally speaking; the more pitch (lower pitch number) in the same diameter propeller will produce more thrust on launch (pulling the plane left) than a higher number, lower pitch, prop. But, a couple of inches less of thrust produced by the 8 verses the 6 doesn't sound like enough to allow the plane to turn dramatically to the right and nose down because of the right and down offset firewall. I could be wrong though. Sometimes these prop set up changes can produce startling surprises.
A few posts ago you mentioned the firewall was broken. Is it possible you altered the thrust line, farther right and further down, when you made the repair? That might account for the tendency to go right and down along with the reduced thrust of the 8.

Ah, what I didn't post was that when I took the cowl off, only the motor mount had broken. The firewall was still intact.

Well, that's good, at least we can eliminate that as a possibilty. Must be the the reduced pitch of the prop or something we haven't identified yet. There aren't a lot of other possibilities though. Mechanics or electronics of the elevator and rudder or Tx trim. Keep us posted.

Went into my LHS today and we figured out the issue. I had grabbed a 12x8P prop. The "p" is for "pusher". Whoops.
New prop will be in next week, he had to order the 12x6 for me.

That's simple enough. An easy mistake to make. That's why I always check with the guy behind counter. :
